Super Easy Vegan Overnight Oats!

The ideal morning for me would begin with rolling out of bed, pouring myself a big cup of coffee and setting the table for a hearty breakfast. Rohith and I would sit at the dining room table, sip our coffee, eat our food and probably be shooing our cats away from trying to steal it.

Like I said, that’s the ideal. We don’t have time for that. Most of the time Rohith doesn’t eat breakfast or rushes out with only a protein shake. I end up just skipping breakfast altogether. There’s nothing wrong with that, but sometimes you want something just a little bit more satisfying on your go go go days, especially if you have important meetings. Can’t have that tummy growl.

These overnight oats were the best solution to that problem, and the best part is, it’s super easy to make! You literally just throw it all together in a mason jar and call it a day. The next morning, all you need to do is grab, go, and chow down!

I’ve seen many different variations of this, but I wanted to make my own vegan recipe. The measurements are what I preferred, but you can, and SHOULD play around with it yourself to find out what consistency and taste you like best. If you’re not vegan, I’ll list the replacements down below, but it’s equally as easy!

INGREDIENTS – 2 servings

1 1/2 – 2 cups Strawberries, sliced

1-1 1/4 cups Vegan Yogurt ( I love Forager’s “Cashewgurt”, if not vegan use regular yogurt )

3/4-1 cup Old Fashioned Oats (or whatever you like)

1/4 cups almond milk (or regular milk)

3 Tbsp Agave ( or honey)

DIRECTIONS

1) Combine yogurt, oats, milk, and agave together in a bowl. Mix everything together well.

2) Spoon half of the mixture into each mason jar. Add the strawberries to full them both up. Close them up and put them in the fridge overnight.

3) In the morning, you can add more strawberries, agave or milk depending on your tastes.
